Dalwhinnie The Eagle Shiraz is the winery's leading wine, produced only in exceptional vintages. It is the first of Dalwhinnie's single block Shirazes, made from the original vines planted in 1977.

The vineyard is a unique amphitheatre surrounded and sheltered by the highest range in the Pyrenees. It is well drained, low yielding and dry farmed. Meticulous hand pruning yields the most precious fruit.

The fruit is whole berry fermented in small open vessels with some stems added. After extended maceration the wine is basket pressed. It matures in half new French oak barrels for 18 months.

Dark cherry red, Dalwhinnie The Eagle Shiraz has rich dark fruit flavours. Seamless tannins lead to a lasting finish. Cellaring potential is 15 years.
